These light, not-so-sweet Italian muffins are made with a thick mixture of flour, cinnamon, ricotta cheese, sugar, and pumpkin puree. You will drop tablespoons of the mixture into the hot oil and fry it for two to three minutes. “I usually toss it in cinnamon sugar when it’s a little warm,” says Chef John. “As with almost every other pumpkin dessert, I think using pure canned pumpkin will give you the best results.”

You’ll marinate pork shoulder chops in a simple spice rub and brown them before braising them in a large cooking squash, such as sugar or pie pumpkin, with some hard apple juice to cover it. “Marinate the pork the way you like it,” says Chef John. “I topped my plate with buttery mashed potatoes and Brussels sprouts.”
